week 6 of latin was good above are the things that were made. the first thing that had to be worked on was the shellfish ceviche which I made I think the shrimp should've been blanched a little less but overall it was good but a lot different then what i'm used to. I added more citrus and grated some orange, lemon, and lime to the mix. it also said to add olive oil and i'm not a big fan of oil in ceviche so I added very little, another thing it asked for was fish stock which I also thought was strange but it wasn't bad and I let that marinate for a couple of hours and before serving then u add bell pepper, onions, tomatoes, cilantro and topped it with avocado. the next dish we worked on was the feijoada bean stew with beef and pork and due to one of our team mates that had to leave me and another student finished the stew and I made the arroz blanco and the kale topping. it was a bit chaotic but we pulled through and it came out good.tj made the empanadas which were different but good just not a fan of the sweet parts in there she also made the tapioca and coconut cake with chocolate sauce I tasted the chocolate sauce but the rest I didn't since im not a fan of coconut. im not a fan of chayote either so the salad I did not try. also the quinoa chowder I wish I would of tried but my mind was flusted trying to get everything served and clean up after ourself. but overall a good menu.
